3 Summer Salads I Turn into Dinner

As the season moves forward, I’m relying more and more on interesting salads topped with some sort of protein for dinner. It ticks all my boxes: it’s relatively easy, can be prepped ahead, it’s satisfying, and I feel like I’m making up for whatever little food detours happened earlier in the day ;)

Asian Slaw with Peanut Dressing

One reader says: "The peanut dressing on this Asian slaw should be bottled and sold!" She's right, it turns a healthy salad into something truly crave-able.

Your dinner shortcuts: use a good fresh (check those dates!!) slaw mix for the cabbage base. Then top with sliced rotisserie chicken. Instant patio dinner.


Broccoli Honeycrisp Slaw

Honeycrisp apples have a cult following, and for good reason. Not as puckeringly tart as Granny Smith's, they have a sweet juicy personality perfect for salads.

Your dinner shortcuts: use bagged broccoli slaw and top with frozen breaded chicken tenders. The kids might even eat their broccoli!


Ramen Salad

This fun salad is all about the crunch. Divide the ramen and add half just before serving.

Your shortcuts: a good slaw mix, a packet of ramen (minus the seasoning packet) and frozen dumplings for a dreamy contrast of textures and temperatures. Makes all that chopping worthwhile!
