Are you like me? I can’t be bothered to think about dinner early in the day, but right about now it suddenly becomes a burning issue. These are a few of my family’s go-to dinners, all built around meatballs.

Italian Wedding Risotto

This was a fantastic recipe! Making for the second time tonight. It made plenty so leftovers, but reheated we’ll. This will become a staple. Thanks for sharing this recipe!

My family went mad for this recipe, the fried wontons are our new favorite snack.

Swedish Meatball Noodle Bowls

Possibly one of the few people who have never had Swedish meatballs before. Made this for dinner a couple of night ago and I was very pleasantly surprised at how delicious these meatballs and gravy were. I was a bit concerned that this would be bland but it was not. The flavors are subtle yet complex and very satisfying with the buttered noodles. Definitely a keeper!

Spiced Lamb Meatballs with Hummus

I made this recipe last weekend for a dinner party and it was FABULOUS. Our guests loved it and asked for the recipe! I used 100% ground lamb (not a 50-50 blend with ground beef) but I’m sure it would be excellent with the mixed meats, too. Curious: when I view this recipe I see a rating of three stars; honestly, whomever has clicked the stars hasn’t made this yet. Because this is a FIVE STAR recipe! ; – ) The tahini-sour creme sauce was also a nice add. (and i used a very good quality & very creamy store bought hummus to save time.) I’ll make these meatballs again and again……

Meatball Mac and Cheese

This is the BOMB! I did omit the nutmeg and added Italian seasoning, garlic salt & a pinch of cayenne to the sauce. I also added a 1 oz slice from Velveeta block.

Meatballs al Forno

I made this recipe last night exactly as written and it was divine! I don’t know if I can make my everyday meatballs again, this was so delicious. I think the pancetta is the ultimate secret ingredient. I made Ina Garten’s marinara sauce (I wanted to have plenty of sauce so I did 1 1/2 the original recipe and added some diced carrot for sweetness). Thanks so much Sue, I am new to your blog but it has quickly become one of the few blogs I look to several times a week.

Instant Pot Barbacoa 🌟🌟🌟🌟🌟

This recipe is great, the flavor is complex and the recipe simple and it feeds for days. I've been stuffing corn tortillas with the shredded meat and cheese and frying them. Lasts a couple months in the freezer and they rewarm great in the air fryer.
I also use a cilantro cream salsa that pairs perfectly with this dish. Blend cilantro, mayo/sour cream, serrano, garlic, limon.
