Back to Basics with the PERFECT Pound Cake πŸ‘Œ

Hey friends❣️

If you only master one baking recipe I think the perfect pound cake would be a great choice :)

Perfect Pound Cake

Pound cake is a pretty straightforward combination of butter, flour, eggs and sugar, but within that framework there's a surprising amount of wiggle room. I tried several different variations before I settled on the best. It's soft, fragrant, and moist. (I hate it when a cake dries out minutes after I slice it.)

I doubled down on the vanilla using my homemade vanilla sugar ~ just pop a used vanilla bean into a canister of sugar and keep refilling...it will flavor your sugar for up to a year!

My first recipe from this blog but definitely won’t be my last!! We had to put it away so we didn’t eat it all in one day. I found the dough to be a little difficult to work with when rolling out as it kept crumbling but I am guessing I should have used more water when I made it. Regardless the crust baked up really nicely and the pie bars tasted delicious. Used chia seeds a thickener for the jam because I was out of cornstarch and that worked very nicely.

I love to make delicious food, photograph it, and write about it, but mostly, I just love to EAT. Isn’t that what it’s all about? My recipes are bold and vibrant, but totally approachable ~ and my philosophy? We should all have the tools to feed ourselves well, and the confidence to cut loose a little in the kitchen. Food should be fun!
