Easy May Dinners We're Making This Week 🌼

Hope you all had a fun Mother's Day. I had an orange juice/prosecco/amaretto cocktail at brunch that pretty much knocked me out for the afternoon so I napped much of the day away. Could have been worse!

As the days get longer my dinner prep gets shorter, and I'm leaning into quick cooking proteins, simple pastas, and flatbread pizzas of all sorts. Here's what I'm thinking for the week ~

Sautéed Bay Scallops

We stumbled on fresh wild caught Cape Cod scallops the other day and had a feast for all of 10 minutes work. Scallops are such a unique treat, and this is the recipe to have in your back pocket so whenever you come across the tiny bay scallops or larger sea scallops, you'll know what to do.

Shrimp Piccata

Also another one of my all time faves Chimichurri Shrimp ~ if you're craving a more explosive flavor.

Lemon Thyme Lamb Chops

Also try Instant Pot Creamy Mushroom Pork Chops

Pasta with Oil and Garlic

Pasta is always a quick win for spring, we love Creamy Lemon Asparagus Pasta and Pesto Pasta with Blistered Tomatoes too!

Flatbread Pizza (with tortillas!)

This unlikely recipe will be the sleeper hit of your spring and summer ~ just try it! There are so many things you can do with this simple genius idea.
