New Today 🤎 Pumpkin Chocolate Chip Muffins

Hey friends❣️

I can't think of another ingredient that has a bigger effect on baking than pumpkin. It adds a soft, substantial texture and makes my muffins, breads, and cakes moist but not at all wet.

And I can't even with the flavor. Pumpkin has a little sweetness of its own, but it’s also incredibly good at carrying other flavors ~ I pair it with warm spices, brown sugar, maple, chocolate, nuts. It's kind of a game every fall: how many recipes can I make even better by adding pumpkin? Turns out quite a few ;)

đź’ˇ moment!

I recently learned that it's fine to store leftover pumpkin in the can in the fridge (straight from the USDA) and this means it's even easier to make a quick pumpkin pancake bowl on a cold morning, or a batch of pumpkin biscuits to go with a bowl of chili on a busy weeknight.

Pumpkin and chocolate has always been the ultimate fall treat for me, it's a marriage made in heaven. Here are just a few of the ways I've paired the two.

My guy is risotto-crazy, and even took a class at the Chicago Botanic Garden. He couldn’t believe how good the IP version was, and pronounced it “perfect.”

Coffee Fudge Traybake

Hey friends❣️ Fudge is such an evocative word. And the interesting thing is that it doesn’t necessarily mean chocolate. In candy-making, fudge is really about that rich, soft, creamy-set texture you get from cooked sugar ~ which is exactly what makes Mary Berry’s traybake so good. That icing sets up almost like candy over the soft coffee cake underneath. Mary Berry's Coffee Fudge Traybake get the recipe It got me thinking about other fudgy recipes... basil for pesto

Hey friends❣️ Happy Sunday! This Sunday message is going to be on the short side...I got my 2nd shingles vaccine yesterday and I'm having a pretty strong reaction (I just want to sleep.) But first, I harvested basil this week! Mine came from my daughter's garden, but there is still lots of top quality basil about, not only in gardens and farmers markets ~ but the basil you'll find in your grocery store will be at its best too. Now is the time to put some fresh pesto in the freezer. Freeze it...
