Happy Sunday!

I hope your weekend is going well. I started mine with a recipe experiment ~ cute mini Easter cupcakes served in an egg carton. I got halfway through before I lost interest.

Mini cupcakes are tricky like that ~ they don’t keep well, so you have to make and serve them the same day. Fun, but not exactly practical.

But even though I won’t be posting this one, it is a cute idea ~ and if you stick to one flavor cake it’s much more doable.

  • Minis take about 8-10 minutes in the oven, I used Duncan Hines cake mixes but my favorite homemade chocolate cake would be fabulous.
  • Homemade frosting (Fresh Strawberry would be perfect) with sprinkles
  • Homemade Whipped cream, topped with a mini chocolate egg
  • Green tinted coconut topped with mini jelly beans

Tip: If you want them to sit up higher in the carton, stuff a little crumbled tissue paper or Easter grass into the wells first 🐰
