The 80s Era Cake Everybody Loves to Hate 👎

Published 12 days ago • 2 min read

Hey friends❣️

Like the mullet and shoulder pads, the dump cake is much maligned...good thing I've given it a makeover!

Rhubarb Dump Cake

The OG dump cake of the 1980's was pretty terrible, but the concept has potential for those of use who love quick and easy fruit desserts in spring and summer. My tweaks make a bad idea into a where has this been all my life idea.

Not into rhubarb? Try this with berries! Or peaches, or cherries.

Need gluten free or keto? There's a cake mix for that!

Wary of cake mix? Try a high quality nothing artificial, no preservatives etc. mix from Bob's Red Mill, King Arthur Flour, and others.

Shortcut Victoria Sponge

Another spring dessert made more d0-able with a cake mix. Try this out for Mother's Day brunch!

Creamy Lemon Asparagus Pasta 🌟🌟🌟🌟🌟

I loved this recipe! I substituted condensed milk for the cream ( needed to save calories and fat 😃) I did add the extras, shallots, white wine, and garlic. My husband loved it, and requested we make it again! Served with grilled chicken.

I love to make delicious food, photograph it, and write about it, but mostly, I just love to EAT. Isn’t that what it’s all about? My recipes are bold and vibrant, but totally approachable ~ and my philosophy? We should all have the tools to feed ourselves well, and the confidence to cut loose a little in the kitchen. Food should be fun!

Hey friends❣️ The weather this weekend is absolutely perfect for picnics and potlucks, but it all comes on sort of suddenly, doesn't it? I've collected my best shareable summer salads so you won't get caught short. Summer Potluck Salads for 2024 I love summer potluck salads, I really don't need much of anything else on my paper plate. This collection is pretty comprehensive, from bean salads to couscous salads, and everything in between. Have fun browsing! What do you feel like today? what...

Hey friends❣️ I'm all about rice bowls today. Rice, and rice substitutes like cauliflower rice and broccoli rice are perfect for lighter spring dinners. Teriyaki Chicken with Broccoli Rice The broccoli rice base for these teriyaki chicken bowls was a wonderful discovery. I’ve riced cauliflower many times for lower carb dishes like my Mediterranean Cauliflower Couscous Salad and my Cauliflower Rice Tabbouleh, but for this recipe I decided to give the technique a try with broccoli. It works...

Brown Sugar Rhubarb Cookies With all of the dozens of rhubarb recipes that have come out of the Great Island kitchen over the years, there has only ever been one other rhubarb cookie (roasted rhubarb baci di dama) ~ until now! And it’s high time: these unique soft batch brown sugar cookies loaded with diced rhubarb are amazing. They’re easy to throw...
