Sometimes I surprise myself. I mean, I knew this cake would be good, and I knew it would make the perfect little treat to mark St. Paddy's Day. Maybe bring it to the office, or share with friends over dinner. But I simply wasn't prepared for that first bite...

​The BEST Irish Cream Snack Cake!​

Omg I can't say enough good things about this little cake. The chocolate cake itself is moist, tender, very chocolatey, and super easy to whisk up in a bowl. Buuuuuuut the real star is the frosting. I just can't....

So I'm starting to think about St Patrick's Day. It's funny because I haven't really been tuned in to secondary holidays like that for a while now, but the arrival of my first grandchild has sort of reinspired me to mark them in some way. These special days that stud our yearly calendar are the memory makers, for sure.
