Everybody, and I mean everybody, should know how to make a great chocolate chip cookie. But what that looks like depends on who you talk to.

Some appreciate a soft pillowy chocolate chip cookie, others crave the classic big-as-your-hand version. I happen to love chocolate chip cookies in bar form.

And my absolute favorite is baked up in a mug!

But it turns out lots of you really really love a thin and crispy cookie...

The best baking sheet for cookies

You might be surprised to hear that I consider cookies to be the trickiest of all baking projects. Their small size means that any little variation can afffect the outcome. It's very hard to write a rock solid cookie recipe because of this.

When it comes to sheet pans for cookie baking I've settled on just one that works the best for me.

  • sturdy, light-colored aluminum for even, predictable baking and browning
  • not insulated so the dough gets direct heat and spreads and sets normally
  • not nonstick so there’s no dark coating changing the bake, and no coating to scratch off
  • a true half-sheet size so it works for everything from cookies to roasting, bars, and sheet cakes
