What We’re Cooking This Week ~ Five Easy Ideas 🥘

Good morning, happy Monday!

I know I should be doing all my weekly meal planning on Sunday, but it just doesn’t happen ~ so I wake up Monday morning obsessed with what we’re going to eat. Here are five ideas for the week ahead:

Roast chicken with lemon and herbs is probably the easiest meal you'll make all winter. Throw it in the oven and forget about it. While you're at it, cut a bunch of yellow potatoes into wedges and throw them in too. Yum.

Leftovers? Make soup or chili.


Cottage pie, if you've never had it, is pure comfort ~ and you can make it ahead. Pair it with a simple Caesar kale slaw or, my favorite, a bag of frozen peas.


⭐ Make sure everybody's ready to sit down for this one, because shrimp piccata takes just minutes. Serve with a light pasta like lemon spaghetti or or aglio olio.


Steak frites sounds fancy but it's as simple as dinner gets. And if it's been a hard week, add some smoked Gouda mac.

Leftovers? (We can dream!) make steak taco crunch wraps or steak fajita bowls with chimichurri sauce.


Sheet pan smashburgers complete with 'special sauce' end the week on a high note. Broccoli Honeycrisp slaw balances out the meal.
