5 Zucchini Cakes 💚 3 Breads, a Bar, a Brownie and a Blondie!

Yup, you guessed it, it's zucchini day!

Don't get me wrong, I love zucchini with dinner and for dinner!

I make my Zucchini Parmesan Crisps and my Healthy Zucchini Fries all the time, and my Stuffed Zucchini with Pine Nut Salsa is a great low carb dinner.

I'll often "beef" up my meatballs with some shredded zucchini, and this pasta is a summer fave. But there's something about baking with zucchini ~ I don't know what it is, I mean the little shreds basically dissolve into whatever I'm baking, and you definitely don't taste the zucchini. But for some reason it's the zucchini desserts I most look forward to every summer.

Rhubarb Coffee Cake 🌟🌟🌟🌟🌟

Deeeelish. So moist and tangy. The topping edge is crisp and a bit caramelized … right up there with getting a lasagna corner. I added lemon zest to the dough and a few shakes of cinnamon and cardamon to the crumb. Baked in an 11×7 right at 40 min. Will definately make again. Thank you!
