Favorite Mex and Tex-Mex Recipes for Cinco de Mayo 🌮🌶️🥑

Published 19 days ago • 1 min read

Hey friends❣️

Spring marches on, I can't believe it's almost May!!

Mex and Tex Mex Recipes for Cinco de Mayo

I love it when Cinco de Mayo comes around because it's a fun reminder to make some of my favorite foods. I'll show you how to make tortillas (no really, they're incredibly easy!) and the most succulent Mexican meats like short ribs and barbacoa.

If you want to broaden your culinary horizons make homemade enchilada sauce ~ it's a game changer and, again, so easy.

Masa harina biscuits, street corn salad, and some of the most refreshing food I've ever experienced like this salad and this frozen drink.

Did somebody say SALSA??!!

I love to make delicious food, photograph it, and write about it, but mostly, I just love to EAT. Isn’t that what it’s all about? My recipes are bold and vibrant, but totally approachable ~ and my philosophy? We should all have the tools to feed ourselves well, and the confidence to cut loose a little in the kitchen. Food should be fun!

Hey friends❣️ I'm all about rice bowls today. Rice, and rice substitutes like cauliflower rice and broccoli rice are perfect for lighter spring dinners. Teriyaki Chicken with Broccoli Rice The broccoli rice base for these teriyaki chicken bowls was a wonderful discovery. I’ve riced cauliflower many times for lower carb dishes like my Mediterranean Cauliflower Couscous Salad and my Cauliflower Rice Tabbouleh, but for this recipe I decided to give the technique a try with broccoli. It works...

Hey friends❣️ Today I'm sharing a new cookie with a really nice soft texture and a flavor that can only be described as the essence of spring! Brown Sugar Rhubarb Cookies With all of the dozens of rhubarb recipes that have come out of the Great Island kitchen over the years, there has only ever been one other rhubarb cookie (roasted rhubarb baci di dama) ~ until now! And it’s high time: these unique soft batch brown sugar cookies loaded with diced rhubarb are amazing. They’re easy to throw...

Hey friends❣️ We all have at least one kid in our life...our inner kid! Funfetti Cookie Bars I patterned these funfetti cookie bars after my Perfect Chocolate Chip Cookie Bars, one of my favorite desserts ever. I have to be careful around them because I can’t eat just one. And, as predicted, these cookie bars have the same effect on me 🙂 I LOVE BAR DESSERTS! They’re more satisfying than a cookie, but not as decadent as a piece of cake…they just hit the spot. Hummingbird Cake Bars Creamy Lemon...
