Want to know how I brown skin-on thighs?

I struggled for years trying to brown skin-on chicken in stainless steel pans (the way all the chefs tell you to do) or in my enameled cast iron Dutch ovens ~ no matter what I did or how patient I was, my chicken skin would stick.

I finally discovered the simple secret: a nonstick pan! I heat a bit of olive oil and butter in a large non-stick pan, then add the thighs, skin down, being careful not to over crowd the pan. That's it! It gives you that wonderful crispy golden brown with that awful sticking.
