My NEW Lemon Pistachio Snack Cake is a Keeper 🍋

This new cake is going on my list of favorites. I keep a running list and every once in a while I'll share it in a post or an email. I'm picky about the sweets I allow myself (since I'm around them a lot) and I've gotten pretty good at resisting, But this cake won me over.

The lemon is assertive, and the addition of crushed nuts in the batter gives the cake a wonderful soft, moist crumb. It's one of those cakes that slices wafer thin, which just encourages snacking :)
