I may have found it, the perfect side: easy, make-ahead, feeds a crowd, budget-friendly ~ and who doesn’t love a creamy potato situation?

The Coziest Grated Potato Casserole

This Finnish inspired casserole is a winner, I'll be calling on it all fall. With old school meatloaf, pork chops, and salmon, for sure. With roast chicken it's a no brainer.

When it was just my husband and me we were able to portion out leftovers for several meals, it keeps beautifully!
