The easy dinners getting me through December ❄️

You’ve probably figured it out by now ~ Christmas cookies can’t be dinner every night. I’m keeping things sane (and delicious) this month with a handful of easy dinners that practically cook themselves.

White Bean and Bacon Soup

I make it with canned beans when I'm strapped for time...so good!

  1. Italian Wedding Risotto ~ the family loves this and for December I make it even quicker with frozen meatballs, or instant sausage meatballs (just roll and brown!)
  2. Jamie Olivers No Yeast Pizza ~ it's actually faster than take out!
  3. Miso Glazed Salmon ~ the salmon takes 20 minutes and goes with any veg.
  4. Creamy Ramen ~ it went viral for a reason (and it takes just minutes to make.)
  5. Smokey Gouda Mac and Cheese ~ luxe!
  6. Sheet Pan Tuna Melts ~ I could live on these.
  7. French Mustard Chicken ~ restaurant quality in less than an hour.
  8. Spinach and Artichoke Quiche ~ everything you love about the dip, for dinner!

Made these for my grands a few months ago and during my holiday visit, they requested them before any other dessert. Made half with walnuts and half wilthout. Tossed my old recipe!
