This salad is super cool ~ the rose colored couscous is a stunning base for this versatile salad and you won't believe how easy it is to do.

I'm heading out to the farmers market but I wanted to shoot this recipe off to you this morning in case you want to make it for Mom.

Summer Couscous Salad

I may never make a heavy pasta salad again ~ couscous is definitely the way to go. It's so quick and easy and makes the fluffiest base for salads.

Imagine this gorgeous salad for lunch. Then again for your Mother's Day brunch, or your next cookout. We had it for dinner with salmon and I thought it was the prettiest meal I've ever made.

Hello again, Sue. For my fourth batch, I also added 40 grammes of slivered almonds. Next batch, I might even try roasting some slivers to add, just to suss out the texture effect. Thanks. Family, friends and I just LOVE this recipe.
