It's going to be a beautiful weekend, I'll be spending lots of time outside getting my herb garden going for the season, how about you?

Mexican Cornbread Casserole

We don't do a full-on fiesta for Cinco de Mayo, but it's a great excuse to try something new from a cuisine famous for its bold vibrant flavors. This casserole is more on the Tex-Mex spectrum, but super delicious and customizable. I made it multiple times this week and my taste testers were very appreciative :)

One of the things I highly recommend if you love Mexican food but don't know where to start ~ homemade enchilada sauce is a game changer, and so easy. I've got a red enchilada sauce and a green version, below, for you to try. Just roast your peppers and blend up these sauces for so many authentic Mexican recipes.

Hey friends❣️ We all have at least one kid in our life...our inner kid!
