Use This Dinner Short Cut ~ 6 Ways❣️

Hey friends❣️

I thought I'd share my absolute favorite dinner shortcut ~ if you love chicken I think you'll love this too.

I keep frozen breaded chicken tenders or breasts in my freezer and sub them in for some of our favorite chicken dinners to make them so much quicker and easier.

~ these are uncooked, and that's one of the reasons they're so good. All I have to do is pop them in the oven (about 25 minutes) while I focus on the rest of the dish.

I love Bell & Evans brand, but there are other good brands out there, my daughter likes Just Bare, which makes a version of these as well.

My secret: I drizzle the chicken with olive oil and season liberally with salt before baking. It really brings out the flavor and crunch.

1. Fried Chicken Tacos

I've made these tacos with frozen chicken tenders several times now and love it. It makes the meal stress free, and I can focus my attention on the toppings!

2. Japanese Katsu Curry Bowl

This famously comforting Japanese dish is a family favorite, and when I'm not up to frying chicken, I use frozen breasts ~ they get just as crispy and slice up beautifully.

3. Crispy Chicken with Artichoke Salsa

When I'm short on time frozen breaded chicken works perfectly in this recipe.

4. Creamy Lemon Chicken with Asparagus

Just cook your frozen breasts separately from the sauce and combine before serving!

5. Chinese Chicken Salad

This is the best summer dinner, and sometimes I'll swap out regular chicken for some thinly sliced fried chicken breasts ~ from frozen of course :)

6. Lemon Chicken Salad with Buttermilk Dressing

This salad is an old favorite in our family, we've been making it for years...except this year we've found a shortcut!

I love to make delicious food, photograph it, and write about it, but mostly, I just love to EAT. Isn’t that what it’s all about? My recipes are bold and vibrant, but totally approachable ~ and my philosophy? We should all have the tools to feed ourselves well, and the confidence to cut loose a little in the kitchen. Food should be fun!

Melon salad

Hey friends❣️ Summer inspires me to get creative in the kitchen. The colors of the tomatoes, the melons, the berries ~ it's a palette I can use to create visually stunning dishes that are equally delicious. Here are some show-stopping ideas (along with more restrained alternatives if you aren't feeling so ambitious.) Cucumber Melon Salad Not sure I've ever made a prettier salad...it's basically a checkerboard made with melon cubes, cuke slices, cherry tomatoes and cheese! It's a cheffy salad...

Tomato Tart!

Hey friends❣️ I've got the gardening bug this year. But I stick to herbs, maybe some baby lettuce, and flowers. I leave tomatoes to the professionals ;) French Tomato Tart with Press in Crust! This is my kind of recipe, it's so do-able. As one reader recently said "deceptively simple and completely delicious!" I think that fits my style perfectly. The tomatoes and light cheese filling are the stars of this tart, but it's that press-in crust that knocks it out of the park. 🍅 (I love this crust...
