3 Healthy Breakfasts I Love ☀️

I'm not gonna lie, I love a little dessert for breakfast once in a while. You can see that in my breakfast recipe collection: so many scones, coffee cakes, and muffins to choose from. But I balance that with healthier choices, especially now that spring is here.

Mediterranean Olive Oil Granola

Granola gets a bad rap because of the added oil, but here I use olive oil and the result is not only heart healthy but surprisingly delicious! You can use a mild or pure oil for subtle flavor but I actually like the results with extra virgin.


Strawberry Rhubarb Smoothie

Rhubarb gives a boring strawberry smoothie tons of extra personality. My spring smoothie rotation:


Orange Oat Bran Muffins

You can add oat bran or wheat bran to your favorite muffin recipe: sub 1/4--1/2 cup of the AP flour with bran. It's an easy way to instantly up the nutrition in your breakfast. (If your batter feels extra thick you can add a tablespoon or two more liquid.)

I love to make delicious food, photograph it, and write about it, but mostly, I just love to EAT. Isn’t that what it’s all about? My recipes are bold and vibrant, but totally approachable ~ and my philosophy? We should all have the tools to feed ourselves well, and the confidence to cut loose a little in the kitchen.
