5 Dinners I Can't Wait to Make in October

September flew by and to be honest, I didn't get on my fall dinner game until now. Pumpkin pancakes ✅. Apple cake ✅. But my dinner rotation has stalled at steak salad, quiche, and tuna melts.

So I’ve officially retired the salad spinner and I’m all in.

Roast Chicken with Potatoes and Apples

Readers call the Scandinavian roast chicken with apples "the perfect early fall meal." They comment on the amazing caramelized cabbage, which could double as the base for so many proteins. It's a keeper.

I've adopted this French beef stew as my signiture go-to when I'm cooking for a group. Everything about it is simple and perfect. I've even made it without browning the meat at all and it turns out great.

You can't go wrong with Ina's chicken, period. The mustard is subtle ~ it's really all about that herby crumb crust, so use gutsy crumbs. The recipe calls for homemade, but Panko works fine too.

Italian Wedding Risotto

I admit it, I'm a zealot about Instant Pot risotto. It's the best I've ever had, and takes 6 minutes (!!) But I'll give you stove-top directions for this recipe too, I don't want anybody to miss out.

New England Fish Pie

​Fish pie is pure comfort food, coastal style. And before you scroll by ~ if you're not a fish person, make my Cottage Pie ~ it's the same idea, only with ground beef.
