A Vanilla Bean Cheesecake to Make for Friends ✨

As we roll through spring, it’s like a train with very few stops: Mother’s Day, then Memorial Day, and then it barrels straight into summer. My work keeps me hyper-aware of every micro-season and the need to make the most of each one. Vanilla bean cheesecake is my take on early spring: clean, classic, and finished with whatever’s blooming outside.

Vanilla Bean Cheesecake (one bowl!)

If you want or need to make a special dessert, cheesecake is the way to go. It's so much easier than baking and frosting a layer cake, and honestly it's quicker and more hands-off than a batch of cookies. I call it the perfect dessert.

My spring version makes use of backyard edible blossoms, but fresh berries work just as well. Macerated strawberries are especially nice:

  1. slice the berries
  2. sprinkle with a bit of sugar
  3. stir and let sit for 30 minutes while they release their juices
