Fresh, light, and full of bright Mediterranean flavor, today’s shrimp packet dinner feels like a welcome shift after a winter of heavier meals. Juicy shrimp, sweet burst tomatoes, briny olives, and slivers of red onion mingle with lemon and herbs to create a silky sauce that soaks right into the orzo underneath.

It’s colorful, satisfying, and endlessly adaptable ~ one of those meals you can make on repeat and never get bored.
