S U N D A Y 🌿 on Great Island

Hey friends❣️

Happy Sunday!

The coming week is going to be a doozy, The leftover Halloween candy, the shorter days, and Tuesday's election ~ it's a recipe for a perfect storm.

But my new apple pie cake is a great excuse to pass off those fun size treats to a willing neighbor, and it will give you something fun to do on a dark afternoon.

I have a feeling a lot of us will be watching Tuesday closely. I’m keeping the oven on and the coffee pot full ~ a warm apple cake on the counter seems like a pretty good idea.

Swedish Apple Pie Cake

Swedish Apple Cake lands somewhere between two classic Swedish apple desserts: äppelkaka, or apple cake, and äppelpaj, or apple pie, but it feels completely at home on my American kitchen table.

I love love love this dessert partly because I love the combo of the juicy layers of Honeycrisp underneath a soft vanilla cardamom cake. But also because ~ surprise! ~ it keeps beautifully on the counter overnight. I honestly couldn't tell the difference in the slice I had the afternoon I baked it and the one I had for, ahem, breakfast the next morning.
