Do any of you watch the Great British Baking Show? This fun cake was the 'technical challenge' this week ~ it's a nostalgic little dessert that used to be served in UK schools. I tried it and…wow. New favorite.

​British School Cake!​

The combination of the vanilla sponge with a thin layer of sweet icing and the silky custard is amazing. If you've made my Irish Apple Cake you've got the idea. (The custard is similar to my Creme Anglaise except it uses whole milk, not cream.)

Golden roast chicken, crispy skin

Hey friends❣️ This is the better-than-rotisserie chicken that just makes life a little bit easier, and a whole lot juicer. Roast one (or better yet two) and eat well for a week. Save the carcass to make soup and you'll basically win meal prep, win life. Perfect Roast Chicken (with lemon and herbs) I try to balance full-on cooking with shortcuts so I don't wear myself out getting dinner on the table.
