The Curious History of Edible Cookie Dough 🍪

Snacking on cookie dough used to be an innocent perk of baking ~ lick the spoon, sneak a bite, no second thoughts. Then came the food-safety wake-up calls. First, raw eggs (Salmonella). Later, and more surprisingly, raw flour, after E. coli outbreaks in the 2000s showed that flour itself can carry harmful bacteria.

Home cooks tried heating their own flour, but the FDA has since warned that this isn’t a reliable solution. Only commercially heat-treated flour is considered truly safe to eat without baking.

For years that meant cookie dough lovers were out of luck, since this kind of flour was sold only in huge industrial bags. But not anymore. I’ve finally found it in home-baker quantities ~ and that’s what makes this truly edible cookie dough possible.
