Spring marches on, I can't believe it's almost May!!

Mex and Tex Mex Recipes for Cinco de Mayo

I love it when Cinco de Mayo comes around because it's a fun reminder to make some of my favorite foods. And this year especially I think it's a good time to honor our friends and neighbors across the border.

I'll show you how to make tortillas (no really, they're incredibly easy!) and the most succulent Mexican meats like short ribs and barbacoa.

If you want to broaden your culinary horizons make homemade enchilada sauce ~ it's a game changer and, again, so easy.

Masa harina biscuits (I'm famous for them,) street corn salad, and some of the most refreshing food I've ever experienced like this salad and this healthy refresher.

(Short Cut) Fried Chicken Tacos 🌟🌟🌟🌟🌟

These were GOOD! The box of chicken breasts had six pieces. It was just my husband and I, so I thought – three tacos for each of us, right? No. When I wasn’t looking, he snagged an extra one, so I had two, he had four. That’s how good they were! Will definitely make these tacos again soon!
