Back-to-the-’70s 🥣 (in a bowl)

The Vegetarian Epicure is held together with tape in my kitchen. It’s the simple recipes, the sketchy line art, and the calm little narrative of back-to-the-land seasonal cooking that's become part of my culinary DNA.

The arrival of fall has got me reaching for it again. Perfect excuse to refresh my corn and cheddar chowder today.

Corn and Cheddar Cheese Chowder

This soup is a family favorite and a great one to make while corn is still so good. I'll make it for Sunday dinner with lots of warm biscuits and a kale Caesar slaw.

But if it's just for my husband and me I'll eat it breakfast lunch and dinner until the pot is empty.

Soup for dinner is a brilliant idea on so many levels ~ it's hydrating, filling, cheap, and there are usually leftovers for lunch the next day.
