The “need-it-now” dessert fix 👍🏼

TGIF! It’s been a full (and fun) week in the kitchen, and I’m not done yet ~ I’ll be test-driving two more reader chili recipes this weekend (submitted for this month's Recipe Roundtable, thank you!)

And for Sunday dinner, I’m always hunting for meals that are 99% done before anyone walks in the door. Last week it was Patricia Wells’ Beef Daube; this week I’m leaning toward Cider-Braised Chicken with Sage. Although I might make a last minute switch to my Lamb and Couscous Stuffed Peppers if the peppers look great at the farmers market.

On the flip side of an ‘all-day simmer’ is my latest recipe refresh: the memory of this moist chocolatey one minute cake has haunted me ever since I first made it in 2012!

Chocolate Zucchini Snack Cake 🌟🌟🌟🌟🌟

I’ve baked this cake two times and plan to bake it for our friends who are coming for dinner. She is an amazing cook and want to make a special dessert for her. This is a special dessert. It’s the best cake I’ve eaten. I use half the frosting and refrigerate the other half for another cake.
