My Perfect Roast Chicken (At Last) 🍗

This is the better-than-rotisserie chicken that just makes life a little bit easier, and a whole lot juicer. Roast one (or better yet two) and eat well for a week. Save the carcass to make soup and you'll basically win meal prep, win life.

Perfect Roast Chicken (with lemon and herbs)

I try to balance full-on cooking with shortcuts so I don't wear myself out getting dinner on the table. In this case I'm not above instant mash and frozen peas. Or have you tried those Minute rice instant cups? I'm obsessed with them, the hot honey chicken and the jalapeño 'flavors' are faves.

For company I'd do Roasted Potatoes with Rosemary or my new Grated Potato Casserole (it's a winner if you haven't tried it yet.) And Hasselback Potatoes with Lemon Garlic Butter would be a fun option.

For something green you could make Green Beans Almondine or get cozy with a Cheesy Zucchini Casserole
