Hey friends❣️

Easy Puff Pastry Carrot Tart

Frozen puff pastry is one of my favorite kitchen “hacks” of all time. A good quality frozen puff pastry bakes up quickly and beautifully, and that buttery, flaky texture is so delicious and versatile. It even stays crisp for leftovers the next day!

I recommend keeping a box or two in your freezer all spring and summer long.

Thai Chicken Salad 🌟🌟🌟🌟🌟

Sue, I made this salad last night, and it is an immediate all-time favorite. I didn't have access to a couple of ingredients, but plowed ahead anyhow! Added a bit more peanut butter and a healthy squeeze of lime to the dressing. You have rocked my world with this one! Even 10 stars wouldn't be sufficient!

It's been a helpful next step on my personal journey to better eating and making my calories count. I...
